This cold and creamy chocolate malted milk by Karen DeMasco, executive pastry chef at Gramercy Tavern in New York City, has a sweet chocolate flavor with notes of umami. Serve it on its own for a treat that will take you right back to childhood, or pair it with the restaurant’s giant Chocolate Chip Cookies.

DeMasco's pastry program at Gramercy Tavern seamlessly combines nostalgic favorites with Michelin-starred techniques. Her cookies and milk is a classic in Gramercy Tavern's more casual Tavern eatery where this chocolate malted milk is the perfect counterpoint to massive, gooey chocolate chip cookies that feature white, milk, and dark chocolate. It'd go great with brownies, too.

The chocolate malted milk can be stored in an airtight container in the refrigerator for up to two days. Stir to re-mix before serving.

Ingredients

  • 4 cups whole milk, chilled, divided

  • 1/2 cup chocolate malted milk powder (preferably Ovaltine)

  • 1/4 cup unsweetened cocoa powder

  • 1/4 cup granulated sugar

Directions

  1. Bring 1 cup milk to a simmer in a small saucepan over medium, stirring often, about 6 minutes. Remove from heat.

  2. Whisk together milk powder, cocoa, and sugar in a large bowl until combined. Whisk warmed milk into cocoa mixture until smooth. Add remaining 3 cups chilled milk, and whisk well to combine. Chill until cold, about 30 minutes.
